- 1/2 cup diced red onion
- 1/2 cup diced bell pepper (red, yellow, or orange for sweetness)
- 1/4 cup chopped fresh parsley (or cilantro, for a different flavor)
- 1/4 cup toasted nuts or seeds (such as almonds, sunflower seeds, or pine nuts)
For the Dressing:
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar (or red wine vinegar)
- 1 tbsp Dijon mustard
- 1 tbsp honey (or maple syrup for a vegan option)
- 1 clove garlic , minced
- Salt and pepper , to taste
