Ingredients:
1 liter (4 cups) whole milk (preferably full-fat)
2-3 tablespoons lemon juice or white vinegar
A pinch of salt (optional)
Cheesecloth or a clean cotton cloth
Instructions:

Pour the milk into a heavy-bottomed pot.
Heat it over medium heat, stirring occasionally to prevent it from sticking to the bottom.
