Ingredients
2 cups (200g) shredded cabbage
1/2 cup (60g) grated cheese (cheddar or mozzarella)
1/4 cup (30g) all-purpose flour
2 eggs
1/4 teaspoon baking powder
Salt and black pepper, to taste
2 tablespoons olive oil
1 medium tomato, sliced
2 additional eggs (for topping)
Directions
Prepare the Pancake Mixture:
In a mixing bowl, combine shredded cabbage, grated cheese, flour, 2 eggs, baking powder, salt, and black pepper. Mix until well combined.
Cook the Pancake:
