Instructions:
For the cake:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line the bottoms with parchment paper.
- Mix Dry Ingredients: In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat with a hand mixer or stand mixer on medium speed until smooth and combined.
- Add Hot Liquid: Gradually pour in the boiling water (or hot coffee), mixing until the batter is well combined. The batter will be thin, but that’s okay—it’s supposed to be like that.
- Bake: Divide the batter evenly between the two prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
