First, clean and wash the potatoes.
Then, and this is an essential step, you have to cut them carefully. For a perfect cut, it is best to use a mandolin or a slicer. If you don’t have one, use a sharp knife to cut it into medium-sized slices no thicker than one centimeter. Each slice is then cut into sticks.
Put the fries in a bowl of cold water. Let them sit for 20 minutes to remove excess starch. Then remove them and dry them with a clean towel.
Then pour a generous layer of oil into the pan. Heat and add the potato sticks.
Let the fries sit until golden brown, about 5 minutes. Don’t hesitate to add a few cloves of garlic, this will give them an even tastier taste!
Remove them from the pan, place them on absorbent paper and let them cool slowly before putting them back in the very hot oil. A few minutes is enough. When you look at them, you will visually notice the well-balanced browning (be careful not to darken them!). Once finished, take them out and place them again on absorbent paper to remove excess oil. Your fries will be tender on the inside and crispy on the outside.
