Chicken Pot Pie Soup

Ingredients

For the Soup Base:
2 tablespoons unsalted butter
1 tablespoon olive oil
1 medium onion, diced
2 garlic cloves, minced
2 medium carrots, diced
2 celery stalks, diced
1/4 cup all-purpose flour (for thickening)
4 cups chicken broth
1 cup whole milk or heavy cream
1 cup frozen peas
For the Chicken:
2 cups cooked, shredded chicken (rotisserie chicken works great!)
For the Seasoning:
1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
1/2 teaspoon dried parsley (or 1 tablespoon fresh parsley)
Salt and black pepper, to taste
Optional Add-Ins:
1 cup diced potatoes (for extra heartiness)
1/4 cup grated Parmesan cheese (for added richness)
Garnish:
1 cup baked puff pastry squares or biscuit crumbles
Fresh parsley, chopped
