Ingredients:
For the meatballs:
1 lb (450g) ground chicken
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 egg
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
Olive oil for frying
For the spinach Alfredo sauce:
2 tbsp butter
2 cloves garlic, minced
1 cup spinach, chopped
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the oven to 375°F (190°C).
In a large bowl, combine ground chicken, ricotta cheese, Parmesan, breadcrumbs, egg, garlic, oregano, basil, salt, and pepper. Mix until well combined.
Form the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
