Ingredients:
2 boiled eggs, chopped
1 ripe avocado, diced
œ lemon juice
Salt & black pepper to taste
Fresh parsley (optional)
Method:
Mash the avocado, mix with chopped eggs, season with lemon, salt, and pepper. Serve on toast or as a dip.

Ingredients:
3 boiled eggs, chopped
2 tbsp mayonnaise (or Greek yogurt for lighter version)
œ tsp mustard
Salt & pepper
Bread slices
Method:
Mix eggs with mayo, mustard, salt, and pepper. Spread on bread slices. Add lettuce or cucumber if you like.
